Apples are still in abundance right now and they’re reasonably priced this time of year. I’m sure several of you have seen the recipes that have flooded Facebook over the past few months.
My husband recently came across an apple cake recipe that he thought looked delicious. So trying to be a good wife, I decided to bake him one. I made a few changes to the recipe and it turned out surprising well.
It has a texture similar to a honey bun and is very moist. We both really liked it. It’s simple and doesn’t require any fancy ingredients.
Sliced Apple Cake
Ingredients: 2 eggs 1 3/4 cups sugar 2 heaping teaspoons cinnamon 1/2 cup apple sauce 5 medium apples 2 cups self rising flour Directions: Preheat oven to 350°. In a large bowl, mix the eggs, sugar, cinnamon and oil.
Peel and thinly slice the apples. Add to mixture in bowl (coating as you go to keep apples from turning brown.) Add the flour to the ingredients in the bowl.
Mix well by hand until all of the flour is absorbed by the wet ingredients. Pour mixture into a greased 9x13” or two 9″ round pans.
Bake for approximately 55 minutes. Cool. Using about ¾ cup confectioners sugar and enough evaporated milk to make a thick glaze I drizzled it over the top of the cooled cake.
It’s super simple, but tastes like you’ve put a lot of time into it.
