The weekend is here and with it football season is in full swing. Many of you get together with family and friends to cheer for your favorite teams. It’s a day of fun, food and relaxation. You don’t want to spend all of your time in the kitchen where you will be missing out on the game day excitement.
I came up with a recipe that will be great to serve guests at your next football get together. This is an easy recipe and won’t take long at all to prepare. Prepare a large cookie sheet by spraying it lightly with cooking spray. Set aside. Take a can of refrigerated pizza dough. Roll it out and using a pizza cutter, cut the dough into six even squares.
Take each individual square and press it out evenly until it is large enough to hold a string cheese stick and you’ll still be able to press the edges together. (Don’t make it too thin or your cheese will ooze out.)
Place a slice of ham, a cheese stick and/or a few slices of pepperoni or some browned crumbled sausage down the center of the pizza dough square. Fold over, sealing the edges well by pressing the dough together with your fingers.
Place on prepared cookie sheet. Repeat for the remaining pizza rolls. Brush with a bit of melted butter (I used spray Parkay) and sprinkle on grated parmesan cheese and some Italian seasoning. Using the temperature on the pizza dough package, bake until golden brown. Serve with pizza sauce for dipping. This recipe makes 6 large pizza rolls. I just used what I had on hand but you can add whatever ingredients you like. I served it with a salad and made it for dinner one evening and it was delicious.

No Cholesterol – Low Fat Pie Crust
1 1/3 cup flour
½ tsp. Salt
1/3 cup canola oil
3 Tbsp. skim milk
Combine flour and salt in a bowl. Blend oil and milk in another bowl and add to flour mixture. Stir with a fork until it forms large clumps. Press into a “ball” and flatten to a 5-6 inch diameter.
Place between two sheets of waxed paper and roll out dough. Remove top sheet of waxed paper and flip into a 9 inch pie pan. Remove other sheet and press into pan fluting the edges. Bake at 350 degrees for a single crust cream pie until golden brown. Cool and fill with your favorite pie filling. For an apple or other two crust pie double the recipe and bake as directed according to your recipe.
